I wrote here about how I make my mashed potatoes allergy free. Well my friend Jeannie mentioned to me that she adds cauliflower to hers. So I tried just a little bit to see if my family would notice.
No one noticed.
So the next time I made them, I added even more. Now I am up to half potatoes and half cauliflower. I simply boil them together, drain and mash like usual.
They are delicious and healthy.

Way to go! I use cauliflower instead of potatoes in "potato salad" because I live low-carb. This is a great idea, that looks and sounds delish!
ReplyDeleteI have been wanting to try this, but I don't really like mashed potatoes and they are a pain to make so I avoid them. But I want the kids to get the cauliflower benefits, so I should probably go ahead and try. Good to know no one noticed a difference in taste or texture.
ReplyDeleteWhen I was diagnosed with Hypoglycemia and pre= Diabetes a friend of mine suggested the Cauliflower substitute instead of potatoes to me. My DR also suggested replacing rice with Quinoa. Another good one was using mushrooms as a pizza base and make individual bite size pizza bites yum!
