Chocolate Banana Muffins



This is a recipe that I found years ago and tweaked it so that it would be safe for my daughter. It is so delicious and not too bad for you, it only has 1/2 cup of brown sugar  and 1/4 cup white sugar and makes 18 muffins. This is a great way to use up old bananas, which is what I use it for.

1/2 cup margerine (again I use Fleischmans Unsalted)
1/2 cup brown sugar
1 1/2 cups very ripe bananas mashed up
1/4 cup water
2 tsp vanilla
3 T water, 3 T oil and 2 tsp baking powder mixed together
1 cup white flour
1 cup wheat flour
3 T unsweeted cocoa powder
1 tsp baking soda
1/4 tsp salt
1/4 cup sugar
1 T wheat germ (optional)

Preheat oven to 375 and line muffin tins with paper liners. Combine butter and brown sugar and cream together. Add the rest of the ingredients and mix. Spoon into the muffin papers and fill about 3/4 full. Sprinkle sugar on top. Bake 20-25 minutes. These freeze well.
